As a soluble fiber, Inulin is a perfect ingredient for coffee drinks, soya drinks and flavored waters, particularly those that could be classed as ‘functional’. Inulin is completely soluble and also gives drinks extra body. Its neutral, slightly sweet taste can strengthen the sweetness of intensive sweeteners while masking any after-taste. But inulin is also an ideal sugar replacement in low-calorie beverages.

As a natural source of soluble dietary fiber with prebiotic properties, it allows the manufacturer to market his product as ‘a source of fiber’ or ‘prebiotic’, etc. Processing and storage conditions (the combination of low pH and high temperature) may affect the stability of inulin in drinks. It is important to bear this in mind when developing a beverage.
